Directions
Preheat oven 350°F. Lightly grease 8-x-8 straight sided pan. Place a sheet of parchment overhanging on 2 sides, for easy removal.
Make the brownies:
Whisk butter and sugar in a large bowl, until combined.
Add eggs, vanilla and coffee flavoring until combined.
Whisk flour, cocoa, espresso powder, salt and baking powder in a medium bowl.
Fold flour mixture into the butter mixture, until just combined.
Pour batter into prepared pan.
Bake in a preheated oven until edges are puffed and a wooden pick inserted in the center comes out clean, about 25 minutes.
Cool completely in a pan, about 1 hour.
Meanwhile, make the frosting:
Combine butter, powdered sugar, and salt in a stand mixer with paddle attachment or electric hand mixer, on low, until combined.
Add flavoring and coloring and mix until combined.
Evenly top cooled brownies with the frosting. Set in refrigerator until ready to top next layer.
For the topping:
Melt chocolate and heavy cream on 50 %, until melted, stirring occasionally, 2-4 minutes.
Spread evenly onto chilled frosting layer.
Place back in the refrigerator to set. Then, cut into 3 x 3 or 4 x4 pieces to achieve desired size.
Recipe Note
Ingredient notes/tips:
- Make sure brownies are cooled before adding the frosting
- Refrigerating between layers and even spreading creates the cleanest layers
- Use a hot, clean knife to cut pieces for the cleanest look
