These are the perfect basic cookies for decorating. They have a subtly sweet, but not too sweet flavor, and they do not spread in the oven. If you like, reduce the vanilla to 1/2 teaspoon and add 1/2 teaspoon of almond extract. To decorate, use our Royal Icing recipe.

2 sticks (1 cup) unsalted butter, softened

⅔ cup granulated sugar

1 large egg, room temperature

1½ teaspoon vanilla extract

3 cups (12¾ ounces) all-purpose flour

Pre-heat oven to 350 F. Prepare 4-large rimmed baking sheets with parchment paper.
Beat butter and sugar in stand mixer with paddle attachment or electric mixer, until just lightened, about 3 minutes.
Add egg and vanilla, scraping as needed, until combined, about 1 minute.
Mix flour and salt into the mixer, until just combined.
Chill dough 2 hours to overnight.
Roll out on a lightly floured counter to 1/4" thick and cut with your favorite Ann Clark cookie cutters, then transfer the prepared pans.
Bake in the pre-heated oven, in batches on the middle rack, until golden on the edges and baked through, 8-10 minutes.
Let cookies cool slightly on cookie sheet, about 5 minutes, then transfer to a wire rack to cool completely. Decorate with Royal Icing (from our recipes) or buttercream or eat plain.
