Royal Icing made with Ann Clark Premium Meringue Powder
This royal icing recipe makes thick royal icing that dries to a smooth, satiny finish. To make the icing less thick, add water one drop at a time. Ann Clark Premium Meringue Powder is already flavored with vanilla, but lemon juice or other flavoring can be added to taste.

Whisk meringue powder and water in mixing bowl of stand mixer with whisk attachment or an electric mixer on medium-high, until stiff and glossy peaks form, 9-12 minutes.

Turn mixer to low, carefully add powdered sugar a 1/3 at time, to the bowl, until fully combined.

Take off mixer and fold in lemon juice, until combined.

Notes & Tips:
- For best volume, clean mixing bowl, as oil residue will prevent stiff peaks from forming in your meringue.
- Add a drop or two of water at a time to reach desired consistency. Learn more about consistencies here.
- To make colored royal icing, add one drop of Ann Clark Gel Food Coloring and mix with a rubber spatula until desired shade is reached.
