Benne Wafers
To lightly toast sesame seeds, spread them out in a pan and bake them in a toaster oven at 350 degrees, or toast them in a large skillet over medium low heat. With either method, stir them from time to time so they toast evenly, and watch them carefully. They should be pale golden brown, which takes only about 5 minutes. Note that the dough is rolled more thinly than usual and baked at a higher temperature to ensure thin, crisp cookies.

- 1 cup Unsalted Butter, Softened
- 1 cup Packed Light Brown Sugar
- 1 Large Egg
- 1 teaspoon Vanilla
- 1/2 teaspoon Salt
- 1/2 teaspoon Baking Soda
- 2 cups All-Purpose Flour
- 1 1/4 cup Sesame Seeds, lightly toasted

Cream together:
Butter
Brown Sugar -

Beat in:
Egg
Vanilla
Salt
Baking Soda -

Add:
All purpose flour
Sesame seeds, lightly toasted - 4 Mix until all ingredients are well blended. Chill dough 1 to 2 hours before rolling.

Preheat oven to 375 degrees. Roll dough out on a lightly floured counter to 1/8 inch thickness and cut, then transfer cookies onto cookie sheets that have been lined with parchment paper or silicone liners.
Bake 8 to 10 minutes, until lightly colored. Let cookies cool slightly on cookie sheets, then transfer to a wire rack to cool completely.
