The secret to Ann Clark's gourmet pancake mix is premium ingredients, which gives our pancakes a rich and subtly tangy flavor, and reacts with leavening agents in the batter to create air bubbles, making perfect tall and fluffy pancakes. Mix just enough to combine wet and dry ingredients, leaving a lumpy batter. Why? If you overmix, gluten will develop, making your pancakes chewy rather than fluffy.
