Bake and cool cookies before decorating. Make sure cookies are fully cooled. If they are warm, the icing will run off of them. Make royal icing. Learn how to mix different consistencies of royal icing here>>

Using piping consistency white icing, outline the entire X shape as shown.
-
3
When making the corners, lift your bag straight up to avoid creating unnecessary bubbles in the icing.
-
4With your piping consistency white icing, pipe a few squiggles in the body of the X shape. This will prevent your flood consistency icing from collapsing, or cratering.
-
5
Using your white flood consistency icing, fill the entire outlined X shape.
-
6
Use a scribe tool or toothpick to move the icing around. This will ensure full coverage and will eliminate any air bubbles in your icing.
-
7
Using your red flood consistency icing, pipe small dots on the X while the flood icing is still wet.
-
8
This will help the dots blend in with the white.
-
9
If you want more dimension between the white base and red dots, wait for the white flood icing to dry 30-60 minutes until it is just crusted over before piping the red dots.
