Bake and cool cookies before decorating. Try Ann Clark's classic gingerbread cookie recipe. Make sure cookies are fully cooled. If they are warm, the icing will run off of them. Make royal icing.

Begin by piping a wavy line on the gingerbread man's forehead, and wavy lines on each of the arms, like sleeves. Also give your gingerbread man a face by piping eyes and a smile. It helps to hover your piping bag just over the cookie, rather than pressing down. By guiding the icing and letting it fall onto the cookie, you'll get more consistent and accurate lines.

Use your royal icing to adhere holly leaf sprinkles in the shape of a bowtie at the neck of the gingerbread man. Then, use royal icing to adhere holly berry sprinkles in the center of the bow tie and down the front as buttons. Alternatively, you can create these details with detail-consistency green and red royal icing.

Add wavy lines using white detail consistency icing at the legs of the gingerbread man, and you're done! Feel free to add more embellishments and details as desired.
