This couldn't be faster using Ann Clark Oatmeal Raisin Cookie Mix ,egg and oil to make a quick sweet treat to have after school or with your afternoon coffee.

Ingredients

1-16 ounce Ann Clark Oatmeal Raisin Cookie Mix

3 tablespoons neutral oil, such as canola, vegetable or avocado

1 large egg
-
1 tablespoon water
Directions
Preheat the oven to 350°F. Line a large-rimmed baking sheet with parchment paper.
Combine mix, oil, egg and water in a stand mixer with paddle attachment or electric hand mixer, until combined.
Form the dough into 1-12 inch log and place onto the prepared sheet.
Place in preheated oven and bake until set, about 30 minutes.
Remove from the oven and let cool completely. Reduce oven temperature to 300°F.
Transfer the log to a cutting surface and slice with a sharp knife on a slight diagonal pieces that are ½ inch wide.
Place cut-side down onto the baking sheet lined with parchment.
Bake in preheated oven, until firm to touch, about 20 minutes. Cool completely on the pan.
Recipe Note
Notes & Tips:
- To make ahead: Make log the day before and slice cookies the next day and bake a 2nd time.
- If you want mini biscotti make 2 small logs instead of the one. You may need to reduce your baking time down 10 minutes on the first bake.
