Maple Oatmeal Raisin Crème Pies

These homemade Oatmeal Crème Pies are the perfect sweet treat or after school snack with all of the nostalgic flavors you love. We used Oatmeal Raisin Cookie Mix to simplify the process for cookie sandwiches that come together in a jiffy. The maple-flavored creme adds a lovely sweetness to this dessert.

Ingredients

6 tablespoons unsalted butter, room temperature

1-16 ounce package Ann Clark Oatmeal Raisin Cookie Mix, divided

1 large egg, room temperature

1 tablespoon molasses

4 tablespoons unsalted butter, room temperature

2 tablespoons shortening

1 ¾ cup powdered sugar

2-3 tablespoons heavy cream

1 ½ teaspoons Ann Clark Maple Flavoring

⅛ teaspoon sea salt
Cookies:
Filling:
Directions
Preheat the oven to 350°F. Line 2 large-rimmed baking sheets with parchment paper.
Make the cookies:
Beat butter in a stand mixer with paddle attachment or electric hand mixer, until just lightened, about 3 minutes.
Add ½ cup mix, to the bowl, scraping the sides, as needed.
Add the remaining mix, egg and molasses to the bowl and mix until combined.
Divide into 16 dough balls and place on prepared baking trays (8 per tray), pressing down just slightly, for a thinner cookie.
Place in preheated oven and bake until set, about 10 minutes.
Let cool on the baking sheet completely before filling.
Make the frosting:
Combine butter and shortening in a stand mixer with paddle attachment or electric hand mixer, until lightened, about 3 minutes.
Add powdered sugar, heavy cream, maple and salt to the bowl, until combined. Place in a piping bag.
Assemble:
Match cookies to like sizes and flip over half of the cookies, so the bottom is facing up.
Divide the filling evenly between 8 cookies, then place the right side up cookie on top of the filling.
Recipe Note
Notes & Tips:
- To make ahead: Make cookies the day before and fill the next day, if desired.
- This all could be mixed by hand if preferred, just make sure your butter is at room temperature.
- Any flavoring could be used here like vanilla extract in place of the maple
- If you like a thicker creme pie, do not press down dough before baking.
