1-9 inch layer cake
This is a very easy, very good dark chocolate cake, wonderful with a variety of frostings, or just dusted with confectioner's sugar. If you like you may bake the batter in 8 inch pans instead to give the cake extra height; the layers may take an extra few minutes to bake.

Ingredients
- 3 cups All-Purpose Flour
- 2 cups Sugar
- 2/3 cups Cocoa
- 2 teaspoons Baking Soda
- 3/4 teaspoons Salt
- 2 cups Brewed Coffee, cooled or water
- 1/2 cup Vegetable Oil
- 2 tablespoons Vinegar, Cider or White
- 2 tablespoons Vanilla Extract
Directions
To Bake the Cake
- Preheat oven to 350 degrees. Grease and flour two 9 inch round cake pans and set aside.
Whisk together in large bowl:
Flour
Sugar
Cocoa
Baking soda
SaltWhisk together in small bowl:
Coffee or water
Vegetable oil
Vinegar (cider or white)
Vanilla extractPour wet ingredients into dry and whisk until thoroughly combined.
Divide evenly into prepared pans and bake for 25 to 30 minutes at 350 degrees Fahrenheit until a butter knife inserted in center comes out clean.
Cool 10 minutes, then remove from pans onto wire racks and cool completely. Frost with Vanilla Buttercream or your favorite frosting.
