- 1.First, get your ingredients ready. You'll need eggs, water, and vegetable oil. We recommend vegetable oil rather than butter, as the oil will trap the moisture in the waffle. This means a crispy, golden exterior and a light, fluffy interior. You can refer to the packaging to determine how much of each ingredient you will need.
- 2. Measure the waffle mix into a mixing bowl.
- 3. Make a well in the mix, adding your water, egg, and oil. Mix the batter, but avoid overmixing. Leave the batter slightly lumpy-the flour clumps will dissolve as the waffles cook.
- 4. Why not overmix? Firstly, it deflates the batter. We want there to be a ton of nice air pockets in the batter for light, fluffy waffles.
- 5. Secondly, overmixing causes gluten to develop, leaving your waffles chewy and rubbery. So be sure to mix until the dry and wet ingredients are just coming together for fluffy, airy waffles.
- 6. Another tip-let your batter rest for about 5-10 minutes. This rest period will allow those flour clumps from not overmixing to hydrate and incorporate into the batter. This rest period will also help the flour and leavening agents in the mix to distribute and build bonds within the mix.
- 7. While the batter gets some R&R, heat up your waffle iron.
- 8. Spray the waffle iron, and then pour the batter into the waffle iron, leaving some space around the edges so that it doesn't overflow. Close the iron and cook until your waffles are golden brown.
