- 1.Get your ingredients ready. You will need butter, eggs, and water. If you want to make your pancakes super rich, you can substitute the water for buttermilk or whole milk. Follow the instructions on the Ann Clark Buttermilk Pancake package to determine how much of each ingredient you will need.
- 2. First, melt the butter. This makes it easier to incorporate into the batter.
- 3. Second, measure the pancake mix into the mixing bowl.
- 4. Add your liquid ingredients the water, butter, and eggs to your dry ingredients. Mix the batter, but avoid overmixing. Leave the batter slightly lumpy-the flour clumps will dissolve as the pancakes cook.

Why not overmix? Firstly, it deflates the batter. We want there to be a ton of nice air pockets in the batter for light, fluffy pancakes.
Secondly, overmixing causes gluten to develop, leaving your pancakes chewy and rubbery. So be sure to mix until the dry and wet ingredients are just coming together for fluffy, airy pancakes. - 6. Another tip-let your pancake batter rest for about 5 to 10 minutes. This rest period will allow those flour clumps from not overmixing to hydrate and incorporate into the batter. This rest period will also help the flour and leavening agents in the mix to distribute and build bonds within the mix.
- 7. While the pancakes are resting, you can heat a skillet or griddle to 375 degrees Fahrenheit. Coat the skillet or griddle evenly and lightly with butter, vegetable oil, or cooking spray. Want an extra kick of flavor? Cook your pancakes in bacon grease.
- 8. Each pancake will be about three quarters of a cup of the mix. Pour the three quarters of a cup of mix onto the griddle. Wait for bubbles to appear on the top of the pancake. Once bubbles appear and the bottom is golden, flip and cook on the second side until golden.
- 9. If you're cooking for a crowd, heat your oven to 180 degrees Fahrenheit and place the pancakes on an oven-proof tray until you're ready to serve.
